Ingredients: · 2 Tablespoons instant coffee · 1 Tablespoon warm water · 3/4 cup light brown sugar · 1/4 cup white granulated sugar · 1/2 cup unsalted butter, (1 stick) melted and cooled slightly · 1 egg, room temperature · 1 teaspoon vanilla extract · 1 1/2 cups all-purpose flour · 2 teaspoons cornstarch · 1/2 teaspoon baking soda · 1/2 teaspoon salt |
Instructions:
1. Preheat your oven to 325 degrees Fahrenheit. Line a baking sheet with parchment paper and set aside.
2. In a small bowl, dissolve the instant coffee granules in the warm water and then set aside.
3. Mix the sugars and melted butter in a large bowl with an electric mixer over medium speed for 1-2 minutes. Add the egg and vanilla and mix until smooth, then add the dissolved coffee.
4. Sift the flour, cornstarch, baking soda, and salt into the batter, then use a rubber spatula to fold all the ingredients together by hand.
5. Use a cookie scoop or spoon to scoop out the dough onto the parchment paper lined baking sheet.
6. Bake in the preheated oven for 10-12 minutes until the edges are just starting to crisp. Remove from the oven and allow cookies to cool slightly before transferring them to a wire rack. Enjoy!
